This week’s menu
SCREAMS comfort food. Memphis’ weather is rainy and cold. I just want to be inside eating “stick to your
ribs” kind of meals. Our day starts with my boys coming down
the stairs in the morning begging for Pop Tarts or frozen waffles but nooo…their
mama has to cook FANCY. Sweet Taylor is
OVER my fancy breakfasts. One day my
children will appreciate the fact that I send them to school with a home cooked
meal but right now they plead for Honey Buns.
Here is the
“fancy” breakfast from this morning:
Coconut Lemon Pancakes
Basic Baking Mix
~ use enough to make around 8 pancakes
¼-1/2
tsp lemon extract
1/2
tsp coconut extract
1/4
cup shredded coconut (optional)
1/2
cup powdered sugar
3-4
TBS milk
Prepare
pancake mix, and add lemon and coconut extract. Cook pancakes.
Instead
of maple syrup, mix powdered sugar and milk to create a thin glaze.
Hopefully our family menu will help give you some ideas for your week. Half the battle is planning for the "What's for Dinner?" question!

1. Cheese and Bacon Wrapped Hot Dogs with Chips
2. Chicken with Mixed Seasonings/Beans/Herb
Pasta
3. Roast with potatoes and Carrots
4. Ham and White Beans with Chips and Pickle
5. Garlic Shrimp
with Angel Hair Pasta
